Legumes Part 1: MATPE BEANS

I found a MATPE BEAN Life Hack!!! 

I found "Huskless Split Black Matpe Beans"



The reason I am so excited about this is they cook WAY FASTER than the original MATPE BEANS.
Matpe beans are small black lentils. They are packed with protein, iron and fibre! (Seriously packed). 

Per 1/2 cup serving, whole MATPE beans contain 100% (25g) of your RDA of fibre, 45% of your RDA or iron and 25g of protein.   (Suraj, Loblaws Canada)

This is SERIOUSLY NUTRITIONALLY DENSE!

The Huskless Split Black Matpe Beans (They are actually white) cook in a fraction  of the time, yet still contain a serious nutritional punch!

Per 1/2 cup serving: 64% (16g) RDA fibre, 35% RDA of iron and 22g of protein. (Suraj, Loblaws Canada)

These cook relatively quickly.  The package says bring to boil then simmer for 15-20 minutes.  It took mine 25 minutes, but that's pretty fast, considering with normal MATPE beans you must soak overnight then boil for up to 45 minutes.

Why do I love these so much?  They have a mild flavour so when you hide them in marinara sauce and blend them up, no one can tell they are there!!! (Unlike black beans, kidney beans, chickpeas, my kids can always detect them and thus complain and fuss.  They don't notice the matpe beans and eat it up!) WIN!!!

Now add pasta (or like today- gnocchi) and your'e good to go!!


Or pour it on top of baked eggplant.

Matpe beans are inexpensive, mild and extremely nutritious!
