This week was our holiday feasts plus left overs! We also did take-out vegan pizza and take-out bean burritos to make life easier during the hustle and bustle of the busy holidays!

Pizza Delivery!
As a young adult vegan, in university, I found the joy of ordering pizza for delivery! Growing up in my rural childhood 'farm' there was no pizza delivery. So when I moved to U of T, I took advantage of this modern and convenient luxury! At the time, vegan pizzas were unheard of. I would always have to explain myself several times to the person taking my order over the phone. "What? No cheese? Are you sure?" My order seemed to confuse them. I can't count the number of free pizzas I received over the years because they always arrived with cheese! So I would send them back, and since I didn't receive my pizza in the allocated time, it would be free! (I had to argue this, but I won as I was right. I didn't get the pizza I ordered within the time frame they promised). While it certainly was a bonus to get free pizza, it was also annoying because I was absolutely starving by the time my correct pizza arrived, and all my friends would be eating their fresh delicious smelling pizza while I was waiting and were long finished by the time my vegan pizza arrived.
My how times have changed!! Now many popular pizza joints, not only will readily make a veggie pizza without cheese, but they also have vegan cheese and vegan pepperoni! The options are endless and really delicious. We've come a long way pizza-baby!!

Holiday Feast!
The holidays are a time for eating! This doesn't change just because we're eating vegan! There are so many vegan holiday recipes. I usually make a savory chickpea-sweet potato pie for myself in lue of turkey... but this time, as all my family would be joining me with the vegan food I upped the anti and made a few protein powered selections: smokey roast tofu with mushroom gravy, festive chickpea torte and quinoa stuffing. These paired with freshly made cranberry sauce, turnip, roast potatoes, cooked carrots, broccoli salad and beet stew made a delicious vegan feast! For desert I made a vegan apple crisp (using coconut oil instead of butter). A yummy way to finish the meal!
As we joined other family members for our two Christmas meals, there were also meat options- including turkey. My kids were free to choose what they want, and yes they did eat turkey. No pressure, it's up to them, as long as they ate some fruits and veggies as well, it's okay. They are currently considering themselves "mostly plant based." My husband and I stuck to vegan food, and it was delicious and satisfying!

Week 3
When my kids pick at their dinner and don't eat much, I always feel reassured when they ask for oatmeal for their bedtime snack. I make them steel cut oats and they top it with fruit of their choice, slivered almonds, cinnamon and their choice of milk. Even if they eat a sketchy dinner, I know they're getting a tummy full of nutrients with this filling meal.
Sweet treat! The coconut vegan 'cheese'cake was a hit with all the kids. They couldn't even taste the difference from real cheesecake!
